Personally, I am not a fan of fish masala and it is something I could live without. However, with that being said my brother has a massive obsession with fish masala and naan. For a whole week, my brother would come into the kitchen and ask me if I was going to make masala fish today. Every time I said no so I felt bad and decided to create this fish masala recipe.
I had never actually made fish masala before from scratch. We had always used a mix packet before, and I didn’t want to mess it up, so I watched some YouTube videos combined with some Google articles to formulate my own masala fish recipe. With this recipe, I will show you make masala fish that has just right the balance of spiced batter and fish. The best thing about this recipe is that it is grilled. A lot of people usually fry their fish masala. I suppose you could probably fry this fish masala recipe as well, but my family had been eating a lot of fried foods lately, so I decided to put it in the oven. I actually think it came out really well and the colour of it was so good. The only problem was that the batter was too thick, so I adjusted the recipe accordingly to ensure that the batter only thinly coated the fish.
I served this spicy grilled fish alongside some homemade naan and it tasted so good. The key to this fish masala is to allow the fish to marinade for as long as possible. I actually marinated mine overnight and it really helps the spices penetrate the fish. The type of fish that you use is up to you. This marinade works well with most whitefish. Although please be very careful with which fish you use as fish numbers are declining and many species are becoming endangered.
Serve this masala fish on a bed of lettuce, cucumbers and tomatoes with homemade naan bread.

- 500g Fish
- 1 tsp. Salt
- 1 tsp. Turmeric Powder / Haldi
- 1 tsp. Chilli Powder
- 1 tbsp. Coriander Seeds (crushed)
- 1 tbsp. Ginger Paste
- 1 tbsp. Garlic Paste
- 1 tsp. Cumin Seeds
- 1 tsp. Garam Masala
- 1 tsp. Chilli Flakes
- 50g Gram Flour / Besan
- 150ml Water
- Pat the fish dry and add into a large bowl
- Add the salt, turmeric powder, chilli powder, coriander seeds, ginger paste, garlic paste, cumin seeds, garam masala, chilli flakes and gram flour
- Mix the fish and ensure that the spices are evenly distributed
- Leave to marinade in the fridge for at least 4-6 hours
- When ready to cook, preheat oven to gas mark 5
- Line a baking tray with foil and add the fish
- Bake at the top of the oven for 40-50 minutes
