Hot Wings

Who doesn't love hot wings? They're the perfect help-yourself starter. This fried chicken with a slight spice in its bite is perfect with a side of fries. Learn how to make perfect fried chicken wings with the crispiest, most flavourful crunchy outside with moist and juicy meat on the inside. When it comes to spicy chicken there isn’t anything more delicious than these hot wings. There are so many chicken wings recipes out there, but these are fool proof wings. These are the ultimate fried hot wings. If you’ve ever wanted to make your own fried chicken wings now is the time to try!


    First Marinade
  • 500g Chicken Wings (with skin)
  • 250ml Buttermilk (250ml Milk + 1 tbsp Lemon Juice)
  • 1 tsp Salt/Namak
    Second Marinade
  • 1 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Paprika
  • 1 tsp Chilli Flakes
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 150g Plain Flour
  • 200ml Water


  1. In a bowl, add the salt to the buttermilk and mix – if you do not have buttermilk then add 1 tbsp lemon juice/vinegar to whole fat milk and leave to sit for 5 minutes
  2. Add the chicken wings to the buttermilk and ensure that the wings are fully submerged
  3. Leave to soak in the buttermilk mixture for at least an hour
  4. In another bowl add the salt, chilli powder, paprika, chilli flakes, garlic powder and black pepper
  5. Mix the spices together
  6. Remove the chicken wings from the buttermilk mixture and add to the spice mixture
  7. Ensure that the chicken wings are fully coated
  8. Leave to marinade for at least an hour
  9. Dredge in the flour then add to the water and then add to flour again
  10. Deep fry at 180°C/350°F for 8-10 minutes flipping every few minutes until wings are browned – use a thermometer if you have one, if not fry at medium heat
  11. Your hot wings are ready!
