Ingredients
- First Marinade
- 500g Chicken Wings (with skin)
- 250ml Buttermilk (250ml Milk + 1 tbsp Lemon Juice)
- 1 tsp Salt/Namak
- Second Marinade
- 1 tsp Salt
- 1 tsp Chilli Powder
- 1 tsp Paprika
- 1 tsp Chilli Flakes
- 1 tsp Garlic Powder
- 1 tsp Black Pepper
- Frying
- 150g Plain Flour
- 200ml Water
Directions
- In a bowl, add the salt to the buttermilk and mix – if you do not have buttermilk then add 1 tbsp lemon juice/vinegar to whole fat milk and leave to sit for 5 minutes
- Add the chicken wings to the buttermilk and ensure that the wings are fully submerged
- Leave to soak in the buttermilk mixture for at least an hour
- In another bowl add the salt, chilli powder, paprika, chilli flakes, garlic powder and black pepper
- Mix the spices together
- Remove the chicken wings from the buttermilk mixture and add to the spice mixture
- Ensure that the chicken wings are fully coated
- Leave to marinade for at least an hour
- Dredge in the flour then add to the water and then add to flour again
- Deep fry at 180°C/350°F for 8-10 minutes flipping every few minutes until wings are browned – use a thermometer if you have one, if not fry at medium heat
- Your hot wings are ready!
