A raita dip is an absolute must at all our family events. It is so easy to make. To put into perspective how easy it is my 10-year-old sister is the one that usually makes the raita for us and she’s been making it for years (slight exaggeration, but it has been a while). That’s how easy it is. All you do is chop some vegetables up, add some yoghurt and mix. Voila! You have your mint raita sauce. Without this cucumber raita, all our family get-togethers are incomplete.
This cucumber raita recipe is actually really simple. I have had a look at other recipes, and they do add coriander or cumin seeds or some other form of spice. My family have always made it like this, so this is the recipe that I have posted. If you want to add some form of spices, go for it but this a quick method to show you how to make raita in literally minutes.
This is technically an onion raita recipe, but my littlest sister absolutely hates onions, so we always make another one that doesn’t have onions in it. Sometimes I get so angry at my sister because she is such a picky eater and I always have to make sure to keep her happy. I know she will listen if I tell her to eat it, but I always feel bad as she is the youngest out of all us siblings. I wish I could be the youngest sibling. Being the eldest daughter really takes its toll. Especially in Pakistani families. It’s like I’m the Guinea pig and test subject for all my parent’s rules and regulations. Like the things my little sisters can do, I would have been slapped to the bottom of the ocean if I had even dared think about it.
Anyways that’s beside the point, this Pakistani raita recipe is the perfect Indian mint sauce to compliment all your curries. It even goes perfectly with samosa, pakoras and the like. I love this raita recipe for biryani. It helps to balance the spices in the biryani. When you have really spicy biryani and you pair it with this refreshing Pakistani raita recipe it tastes so good. - 400g Greek Yoghurt
- ½ Cucumber (cubed)
- 2 Tomatoes (cubed)
- 1 Red Onion (finely diced)
- 1 Carrot (grated)
- 1 tbsp. Mint Sauce
- Add the cucumber, carrot, tomatoes and red onions into a bowl
- Add the mint sauce and mix to ensure all is evenly incorporated
- Add yoghurt and mix again
- Refrigerate for at least half an hour
